Spicy Garlic Shrimp & Grits

First, it is essential to recognize that this is clearly not a healthy meal option.

Begin by lightly pouring olive oil and 2 freshly chopped garlic cloves into a bowl containing 1 pound of shrimp. Stir the mixture and allow it to sit in the refrigerator for at least 30 minutes before grilling. In a separate pot, bring 1 1/2 cups of heavy cream, 1/2 cup of half and half, and 2 cups of vegetable stock (chicken stock can be substituted) to a boil. Incorporate 1 cup of Palmetto Farms grits into the pot, whisking vigorously, and reduce the heat to low.

Cover the pot and let it simmer while whisking for an additional 5 minutes, then switch to a spatula and continue whisking every 4 minutes for the next 12 minutes.

Stir in 2 tablespoons of butter, 1 cup of cheddar cheese, and salt and pepper to taste. Cover the pot to allow the mixture to thicken.

For the sauce, start by sautéing 2 tablespoons of salted butter, 3 tablespoons of shallots, and 1/4 cup of sun-dried tomatoes. Add 2 tablespoons of Florida Man's Lunacy Roasted Garlic Hot Sauce, approximately 1 cup of chicken stock, half a cup of Pinot Grigio wine, the juice of half a lemon, and a dash of salt. Let the sauce reduce to the desired consistency.
