Ingredients:
- 1 fresh pineapple
- 2 cups cooked rice (preferably day-old and chilled)
- 2 tablespoons vegetable oil
- 1 cloves garlic, minced
- 1 small onion, diced
- 1/2 red bell pepper, diced into small chunks
- 1 cup snap peas, trimmed
- 1 cup baby corn, sliced
- 1 cup broccoli florets
- 1/2 cup fresh pineapple cubes
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 2 tablespoons Florida Man Lunacy Pineapple Hot Sauce (adjust to taste)
- Salt and pepper to taste
- Chopped chives for garnish
Instructions:
Prepare the Pineapple Shell:
- Cut the pineapple in half lengthwise, leaving the green top intact.
- Use a knife and spoon to carefully hollow out both halves, leaving about a 1/2-inch border around the edges. Reserve the pineapple flesh for later use.
Heat Oil and Cook Vegetables:
- Heat the vegetable oil in a large pan or wok over medium-high heat.
- Add minced garlic and diced onion to the pan and sauté until fragrant and translucent.
- Add red bell pepper, snap peas, baby corn, broccoli, and fresh pineapple cubes to the pan. Stir-fry for a few minutes until the vegetables are tender-crisp.
Scramble Eggs:
- Push the vegetables to one side of the pan and pour the beaten eggs into the empty space.
- Allow the eggs to set slightly, then scramble them until cooked through.
- Mix the scrambled eggs with the cooked vegetables in the pan.
