Spicy Pineapple Fried Rice

Spicy Pineapple Fried Rice is a flavorful and aromatic dish that combines the sweetness and heat of our Pineapple Hot Sauce and the savoriness of fried rice. Serve as a vegetarian main course or as a side dish to accompany your favorite protein, spicy pineapple fried rice is sure to excite your taste buds with its tantalizing combination of sweet, spicy, and savory flavors.

Ingredients:

  • 1 fresh pineapple
  • 2 cups cooked rice (preferably day-old and chilled)
  • 2 tablespoons vegetable oil
  • 1 cloves garlic, minced
  • 1 small onion, diced
  • 1/2 red bell pepper, diced into small chunks
  • 1 cup snap peas, trimmed
  • 1 cup baby corn, sliced
  • 1 cup broccoli florets
  • 1/2 cup fresh pineapple cubes
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 2 tablespoons Florida Man Lunacy Pineapple Hot Sauce (adjust to taste)
  • Salt and pepper to taste
  • Chopped chives for garnish

 

Instructions:


Prepare the Pineapple Shell:

  • Cut the pineapple in half lengthwise, leaving the green top intact.
  • Use a knife and spoon to carefully hollow out both halves, leaving about a 1/2-inch border around the edges. Reserve the pineapple flesh for later use.
Heat Oil and Cook Vegetables:
  • Heat the vegetable oil in a large pan or wok over medium-high heat.
  • Add minced garlic and diced onion to the pan and sauté until fragrant and translucent.
  • Add red bell pepper, snap peas, baby corn, broccoli, and fresh pineapple cubes to the pan. Stir-fry for a few minutes until the vegetables are tender-crisp.
Scramble Eggs:
  • Push the vegetables to one side of the pan and pour the beaten eggs into the empty space.
  • Allow the eggs to set slightly, then scramble them until cooked through.
  • Mix the scrambled eggs with the cooked vegetables in the pan.

Add Rice and Sauces:
  • Add the chilled cooked rice to the pan, breaking up any clumps with a spatula.
  • Pour soy sauce, oyster sauce, and Florida Man Lunacy Pineapple Hot Sauce over the rice mixture. Stir well to combine and evenly distribute the sauces.
  • Season with salt and pepper to taste. Continue cooking and stirring until the rice is heated through.

Serve in Pineapple Shells:
  • Spoon the pineapple fried rice into the hollowed-out pineapple shells, dividing it evenly between the two halves.
  • Garnish with chopped chives on top.
